The pistachio is the trademark product of Aigina island and one of the most famous Greek products. It is exported beyong Greek borders and is considered among the best in the international delicatessen. After harvesting, the open pistachios are carefully selected by hand and dried in the sun for 3-4 days, in order to acquire a more spicy taste. They are then stored in refrigerators, especially for nuts with suitable temperatures and hygiene conditions. From the refrigerator, they are taken out in batches and baked with salt and lemon in state-of-the-art ovens, certified with ISO 22000: 2005. They are available in special packagew that keeps them fresh for a long time. After opening, put the Aegina pistachios in the refrigerator in an airtight jar with a rubber band.
